  • Preheat oven to 350 degrees F (180 degrees C).
  • In large mixing bowl, combine coconut, sweetened condensed milk and extracts; mix well.
  • Drop by rounded teaspoonfuls onto aluminum foil-lined and generously greased baking sheets.
  • Bake 8 to 10 minutes or until lightly browned around the edges.
  • Immediately remove from baking sheets.
  • Store loosely covered at room temperature.

  5. As simple as it is, this recipe didn't turn out so well for me :( I love the flavor the almond extract gives and they are chewy and moist, but the overall "shape" was a total flop. The first batch ended up looking like mounds of coconut in pools of baked condensed milk. In trying to fix this, I scraped them all off the pan back into a bowl, reshaped them and baked again for another 6 minutes (yes, I "twice-baked" them. I ended up with a thicker macaroon, crispy on the outside - chewy on the inside. I tried to flatten them out more on the second batch, but there was little improvement, just a flatter macaroon.
