  • 2 boneless skinless chicken breasts, cubed
  • 2 cups minute success rice
  • 10 ounces frozen chopped onions
  • 10 ounces frozen bell peppers
  • 10 ounces frozen corn in butter sauce
  • salt and pepper
  • 14 cup Italian dressing

  • Throw chicken, peppers, onions, and corn into frying pan and cook until chicken is done.
  • Boil rice according to directions. The 10-minute rice should be done by the time the chicken and vegetables finish cooking.
  • Add rice, dressing and seasoning to frying pan.
  • Simmer about 3-5 minutes and serve.

Although I didn't use all frozen vegetables, I did follow your list of ingredients, but used 1 1/2 cups of chopped onions, 1 1/2 cups of chopped bell peppers & then the listed frozen corn & ended up with a nice tasting chicken dish! Certainly worth making again, thanks to your recipe! [Made & reviewed for one of my adopted chefs in this Spring's Pick A Chef event]
