- Preheat oven to 350°F.
- Combine Bisquick, 1/4 cup sugar, and 1 teaspoon cinnamon.
- Add applesauce, milk, egg and oil, and beat vigorously for 30 seconds.
- Fill greased muffin pans 2/3 full and bake 12-15 minutes.
- Cool slightly and remove from pans.
- Mix remaining sugar and cinnamon.
- Dip tops of muffins in melted butter, then in sugar-cinnamon mixture.

Well, if I didn't change the recipe some, then that just wouldn't be like me. I used the heart healthy bisquick, I added 1/2 chopped granny smith apple to the batter, I am sure that I added more than 1 tsp of cinnamon also. I added some brown sugar to my cinnamon/sugar mix and sprinkled it on before baking. These came out yummy!

We found these to be pretty bland and think more applesauce or maybe some pumpkin pie spice would be good. I used Recipe#145489 as the bisquick (which I have used before with very good results), skim milk, and egg whites. Those changes sometimes effect the texture of muffins. We didn't feel there was anything wrong with the texture, we just thought they were bland. The addition of the topping did improve them. I sprayed the tops with butter spray and then added the sugar/cinnamon mix. The kids liked them more than the adults, but we thought they were ok and they will certainly all be eaten!
