- 1 tablespoon butter or 1 tablespoon margarine
- 4 chicken thighs
- 1 teaspoon seasoning salt
- 1⁄2 teaspoon paprika
- 1⁄2 teaspoon basil
- 1⁄4 teaspoon pepper
- 1 cup water
- 2 carrots, cut in 1 inch slices
- 2 medium potatoes, peeled and quartered
- 1 1⁄2 cups frozen peas
directions
- Melt butter in deep skillet.
- Add chicken and cook until browned.
- Sprinkle chicken with seasonings.
- Add water; cover.
- Cook on med for 8 minutes.
- Add carrots, potatoes and peas.
- Bring to a boil.
- Reduce heat back to med; cook, covered for another 15 minutes, until vegetables are tender.

I added garlic while it was sauteeing as well, and I used chicken broth (using "chicken broth base" paste) instead of water. I was a little worried there wouldn't be enough fluid but it was the perfect amount and created a rich and savory gravy that we poured over the potatoes. For me this was comfort food, reminding me of something my grandmother used to make, my daughter however said "It tastes like pot roast but with chicken". All in all, this was fabulous. Thank you!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
