  • 2 tablespoons butter
  • 1 onion, chopped
  • 28 ounces canned tomatoes, diced
  • 3 cups beef broth
  • 1 teaspoon italian seasoning
  • 1 lb cooked meatballs (or a little less)
  • 34 cup pasta (shells, macaroni)
  • 1 cup frozen vegetables (corn and carrots are great)
  • 18 teaspoon baking soda (to reduce acidity)
  • 14 cup cream (optional)
  • parmesan cheese, shredded (lots!)

  • Melt butter in a large pot over medium heat. Add chopped onion and fry until soft.
  • Add the canned tomatoes and beef broth and bring to a boil.
  • Add the italian seasoning, meatballs and pasta. Reduce heat and simmer for 10 minutes or until the pasta is cooked.
  • Add the frozen vegetables and baking soda. Cook until vegetables are hot.
  • Remove from heat and stir in the cream.
  • Ladle into bowls and top with lots of parmesan cheese.
