- 2 tablespoons butter
- 1 onion, chopped
- 28 ounces canned tomatoes, diced
- 3 cups beef broth
- 1 teaspoon italian seasoning
- 1 lb cooked meatballs (or a little less)
- 3⁄4 cup pasta (shells, macaroni)
- 1 cup frozen vegetables (corn and carrots are great)
- 1⁄8 teaspoon baking soda (to reduce acidity)
- 1⁄4 cup cream (optional)
- parmesan cheese, shredded (lots!)
directions
- Melt butter in a large pot over medium heat. Add chopped onion and fry until soft.
- Add the canned tomatoes and beef broth and bring to a boil.
- Add the italian seasoning, meatballs and pasta. Reduce heat and simmer for 10 minutes or until the pasta is cooked.
- Add the frozen vegetables and baking soda. Cook until vegetables are hot.
- Remove from heat and stir in the cream.
- Ladle into bowls and top with lots of parmesan cheese.
