  • 2 cups cabbage, sliced thin
  • 1 tablespoon chunky peanut butter
  • 1 tablespoon frozen orange juice concentrate or 1 tablespoon apple juice concentrate
  • 1 tablespoon balsamic vinegar
  • 18 teaspoon hot pepper flakes

directions

  • Put all the ingredients in a bowl.
  • Cover and microwave on high for 4 minutes, or until the cabbage is limp and the peanut butter is melted.
  • Stir to cover the cabbage with sauce, and serve.

  2. I must admit I had some doubts...I don't use the microwave much (I wouldn't even have one if I hadn't "married into it "{{lol}}...end all glad I tried it!! I used my own home-made nut-butter blend...it was a mix of cashew & almond with chili spice...added some soy (really Braggs) ...extra red pepper and more mixed dried pepper & chili...(just kept tasting the dressing 'til it was yum-yum...:) )...I about doubled the cabbage...then added some shredded carrot, fresh garlic, chopped basil and diced hot pepper the (greens are fresh from my garden right now so I am USING them in EVERYTHING...:) ) I sort of doubled the dressing amounts to to accommodate...and just threw it to nuke ??? (in a big casserole...3.5 min no stirring...zippo = done and YUM :).... served with a sprinkle of chopped cashews on top with grilled peanut glazed tofu...EXCELLENT - THANKS Dancer^! :)...easy, quick and tasty!! Fresh...not at all limp like I feared... I should not have had any doubts...:)
