Quorn Chili

- 1 (300 g) package quorn mince
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 (300 g) can kidney beans, washed and drained
- 1 (400 g) can chopped tomatoes
- chili powder
- 2 tablespoons olive oil
- salt & pepper
- boiled rice
directions
- Saute chopped onion and chopped bell pepper in olive oil for a few minutes.
- Add the pack of Quorn Mince and saute for a further few minutes.
- Add the kidney beans, chopped tomatoes, salt, pepper and chilli powder to taste.
- Bring to the boil while stirring regularly, cover and simmer for 20-30 minutes.
- Serve with a large portion of boiled rice - Basmati is my favourite!
- Can also be cooked in the slowcooker.

I cannot believe I've been a vegetarian for over 16 years, and never tried this product! I had used the soy crumbles as a meat sub in chili, lasagne, etc., but not quorn. I am now a HUGE fan! What I like is that (unlike the brand of soy crumbles I'd used) quorn is not pre-seasoned, so that I can add my own herbs and spices to taste. This is quite a good chili recipe---thanks!

I know that some US supermarkets carry at least some Quorn products. I believe the Quorn website lists which stores carry it in a given area. I haven't tried it yet, but my DH has and thought it was very good. He tried the nuggets. I'll have to mention this recipe to him; I expect he'll want to try it out. Update: I've tried Quorn nuggets now; they were so much like chicken in taste and texture, it was almost kind of scary!
