- 1 1⁄2 lbs red snapper fillets, cut into 6 serving pieces
- fresh ground black pepper, salt, to your taste
- 3 -4 tablespoons fresh orange juice
- 2 -3 teaspoons grated orange zest
- 3 tablespoons oil
- nutmeg
directions
- Combine salt, pepper, juice, rind, and oil.
- Place fish in single layer in an oiled oven ready dish.
- Pour sauce on top.
- Sprinkle with nutmeg.
- Bake at 350 for 20-30 minutes or until fish is cooked.

So simple, so delicious. It became my favorite fish recipe. I love ginger, so I add a tablespoon (or more) minced ginger to it. It blends very well with orange. Even if I forget about the nutmeg, it is great. I made it with fresh whole snapper a couple of times, and with other fish too. OMG. Thanks for posting.
