Rhubarb Squares

  • Combine 2 cups flour, baking powder and salt.
  • Cut in 1/2 cup butter.
  • Add eggs and milk.
  • Pat into a greased 9 x 13 pan.
  • Cover with rhubarb and sprinkle dry gelatin on top.
  • Mix butter, sugar and l cup of flour.
  • Put this on top of rhubarb.
  • Bake 30-35 minutes at 350 degrees.
  • Let cool then cut into squares.

  1. My family loved this. They were all going yuk , rhubarb, but now there is a third of a pan left. I took some to my 92 year old neighbor who also loved it. She said she was going to give some to her son and after he ate it tell him it is rhubarb. I used strawberry margharita jello as that is what I had on hand.
     
  2. I used orange jello,didn't have strawberry. I changed the name to crazy cake because of the way it looked while baking, and also because my family doesn't eat rhubarb if they know it is rhubarb!! Excellent and easy. Thanks.
     
  3. I usually don't like recipes that call for straight rhubarb, but this recipe is awesome.
