Rice-A-Roni Casserole

"Also affectionately known around our house as "ugly casserole". I don't remember where I oringinally found this recipe but I've been making it for over 15 years. Everyone in the family loves this stuff. I hope your family will enjoy it, too."

  • 1 lb ground beef
  • 2 (6 1/4 ounce) boxes Rice-A-Roni
  • 2 (10 1/2 ounce) cans cream of mushroom soup
  • 4 cups hot water
  • 1 (6 ounce) can Durkee onions

directions

  • Brown beef in a skillet; drain off grease.
  • Place drained beef in a large bowl. Add seasoning packets from rice mix, soup, and water. Whisk until thoroughly blended. Mix in rice and noodles from boxes.
  • Place in a greased 9 x 13" glass casserole dish.
  • Bake at 350 degrees for 1 hour.
  • Remove from oven and stir thoroughly, making sure to scrape the bottom of the casserole, so the rice isn't sticking.
  • Return it to the oven and bake 10 minutes more, sprinkling the onions over the top for the last 3 minutes.

This dish is awesome, I didn't have two boxes of rice a roni so I used the one box i had (italian garlic), and filled the rest of the box up with white rice (only half of the box was full) When I mixed it together I put extra italian seasoning and garlic to compensate for the white rice. I also used fresh onion like the other commentors. When you are supposed to stir during baking, I added a good amount of kraft parmesan cheese.<br/><br/>The Italian version of this was definitely good!
     
  4. This was delicious! I had to sub I can of golden mushroom soup for a cream of mushroom but it worked out just great! I also had some leftover minced onion and celery in the fridge so I added that and some garlic powder to the ground beef while browning. To get my family to eat more of this I just had to brown the rice and vermicelli mixture, but U did use the same pan as the ground beef and it only took about 5 minutes, so it didn't add alot to the prep of this casserole. I also decided on a whim to add about 1 teaspoon of curry powder into all the ingredients (it added WONDERFUL zest) and baked as directed. This would be an amazing pot luck dish as well as a hearty family meal. I just thought it was so easy and flavorful. Thanks so much for sharing this Roxi.
     
  5. I needed something in a hurry. Wow. LOVED IT. Now i used ground turkey instead of beef, and I used Cheesy Rice A Roni instead of the original. Oh and fresh onions instead of Can. YUMMY !!! I will be making this again

  1. Haven't tried this recipe, but my family Rice-a-Roni casserole as well. Ours was without the onions and cheese instead. We have used many different soups and rice-a-roni variations, too. Always good!
