- 1 1⁄2 cups coconut milk
- 2 1⁄2 cups water
- 1 stalk scallion
- 1 small onion
- 2 sprigs thyme
- 1⁄8 teaspoon salt
- 2 cups rice
- 2 cups red kidney beans
- 1 small scotch bonnet pepper
directions
- In a pot, combine coconut milk, water and seasonings, bring to boil.
- Add rice, red kidney beans, salt and stir.
- Add scotch bonnet pepper.
- Cover and reduce heat, allow to simmer until grains are soft.
