  • In a pot, combine coconut milk, water and seasonings, bring to boil.
  • Add rice, red kidney beans, salt and stir.
  • Add scotch bonnet pepper.
  • Cover and reduce heat, allow to simmer until grains are soft.

  1. This is the way I have prepared my rice and peas for many years. I used pure cream coconut to replace the milk and added a teaspoon of salt, the seasoning was perfect for our taste. Served with sweet potatoes and jerk pork! A very tasty dinner!

  3. We enjoyed this dish very much, thanks for sharing Superwomenblack. I made my own coconut milk, and added 1 1/2 scotch bonnet peppers, which I finely minced and 1 tsp sea salt. It was so delicious, that we had the leftovers with breakfast the next day.
     
  4. Very good and easy - I would suggest adding a bit more salt for flavor - the only thing lacking and the heat was just right with the inclusion of the scotch bonnet pepper!
     
  5. What a delightful recipe! I used the whole can of coconut milk (didn't want any leftovers) and just cut back on the water. I added the whole scotch bonnet pepper with the rice and then fished it out when the rice was done. This is marvelous!
