  • 3 egg whites
  • 12 teaspoon salt
  • 1 cup sugar
  • 14 teaspoon almond extract
  • 2 cups crisp rice cereal
  • 2 14 cups shredded coconut

directions

  • Preheat oven to 275°F.
  • Beat the egg whites until stiff.
  • Beat in gradually,the salt& sugar.
  • Slowly,fold in the rice crisps& coconut& extract.
  • Combine well.
  • Drop mixture from tip of your spoon upon ungreased,heavy paper.
  • Bake for 18-20 minutes.

  2. I'm a big fan of both coconut macaroons and rice krispy treats so when I saw this I had to try it. This is a great twist on macaroons. It gives you the same flavor, but makes it a bit lighter with the cereal, and adds the vitamins that come with the krispies. Very easy to make, and hard to stop eating. I had some leftover coconut I'd colored for Easter, so I used that and they came out very pretty! You can easily color the coconut for any occasion and have a themed treat. Glad I found this one!
     
  3. A Kitchen-Aid stand mixer makes this super easy. The paper is key as a lot of oil comes out of the coconut as it cooks. Delicious!!
