  • Beat ricotta cheese, eggs, sugar, butter, and vanilla.
  • Add flour, baking soda and salt.
  • Knead well and place on a greased cookie sheet,by using a teaspoon to put them on the cookie sheet.
  • Bake them at 350°F.
  • When cooled, ice them with a butter and confectioners sugar icing.

  1. Incredible cake-like cookies! The only change I made was I used 1 tablespoon of baking soda instead of 2 teaspoons. I baked them for 10-15 minutes, until the bottoms started to brown. Then I iced them with 1 c confectioners sugar + 1/2 t vanilla + milk (added 1 t at a time until drizzling consistency). Then I drizzled on the cookies. Yummy! Everyone I've shared these with loved them, I will definitely be making them again!
