- 2 large eggs
- 3⁄4 cup skim milk
- 1 tablespoon butter
- 1 cup ricotta cheese
- 1⁄2 cup all-purpose flour
- 1⁄3 cup whole wheat flour
- 1 tablespoon sugar
- 1 1⁄2 teaspoons baking powder
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon cinnamon
directions
- Melt butter and add eggs, milk and ricotta.
- add flours, sugar, baking powder, salt and cinnamon and whisk until batter is smooth.
- heat a large nonstick skillet until hot. Spoon 2 tablespoons of batter for each pancake into the skillet leaving room between. Let cook until bubbles begin to appear on the surface, about 2 minutes. Flip and cook an addititional 1-2 minutes.
