Rizzo Salad (creamy fruit salad w/orzo)

"This salad is cool and refreshing; very easy to make. Similar to an ambrosia salad but the orzo gives it a different twist. Serve this at your next shower, picnic, potluck, summer BBQ, Easter dinner, etc. Prepare the night before serving."

  • Cook and drain orzo noodles.
  • In a saucepan combine eggs, sugar, salt, cornstarch while gradually adding in reserved juice and stir to mix.
  • Bring to a boil and stir, until mixture is a little thick.
  • Set aside to cool.
  • In a large serving bowl, combine orzo, orange, pineapple and juice mixture; mix with Cool Whip.
  • Refrigerate until serving.

  2. I needed a fruity salad for our 4th of July BBQ and this one was very different and quite good. I didn't see where to add in the pineapple and mandarin oranges so I added them in step 5. Worked out fine. I made it the night before as suggested. Thanks for the rec, Tara.
     
  3. Remember to make this the night before (live and learn!) and to BEAT THE EGGS before using them.
     
  4. This is a great old recipe that has hung in there for a good reason. It's really good! Years ago it was called "frog eye salad" because of the shape of the pasta (which is still available,) called acini de pepe. Try it you'll like it.

Welcome! I joined this website in 2001, as a new wife and Mom of a 1 y/o and I was 28 yrs old and did not know about cooking. I found this website cause I searched the web and wanted to find a good recipe for carrots! I found that recipe and so much more here over the years. I learned so much from this website and opened up my eyes to other recipes. I now am 46 y/o. I am now divorced and my then 1 y/o son is now a Marine. I have a wonderful man in my life that loves and appreciates my cooking and I thank this site for all of its help. I still come here for recipes.
