Road Trip Snack Mix

"I make this every time we go on a road trip; it's great for snacking on the road. You can either pack it in a couple of large bowls, or into individual zip top bags for the kids. It makes lots!"

  • 1 (10 ounce) package mini twist pretzels
  • 1 (12 1/2 ounce) box Ritz Bits miniature crackers (or Ritz sticks snack crackers)
  • 1 (9 3/4 ounce) can salted cashews
  • 1 (7 1/4 ounce) package bite-size cheddar cheese goldfish crackers
  • 1 (1 ounce) package ranch dressing mix
  • 12 cup vegetable oil

  • In a very large bowl, combine the pretzels, Ritz bits, cashews, and crackers.
  • (I use my largest roasting pan for this.).
  • Sprinkle evenly with dressing mix, then drizzle with oil.
  • Stir gently but thoroughly until all pieces are well coated.
  • Store in an airtight container.

  1. this is a yummy snack , even with cocktails, i did cut back to 1/3 cup oil and added an extra packet of dressing mix. i also baked it in the oven @ 250 for about 45 min stirring every 10-15 minutes, that gives everything an added crispiness and soaks up the oil.

  3. This was ok. Very boring flavor (just salty) even after doubling the seasonings like some reviewers suggested. It was very easy, but I probably won't be making it again.
     
  4. Loved it! And it was so darn easy...could not find the small ritz bits without filling so I used the new ritz bits that are part pretzel...turned out perfect.
     
  5. This is soooo yummy. I forgot to review this when I made it a long time ago. Then, I was looking for something to bring to a gathering and remembered this. I was at the grocery store, but I came close to remembering all the ingredients except the goldfish. I bought frito scoops, so I had to use those instead. I look forward to doing it again with the goldfish..as it is better when the ingredients are smaller in size. Thanks for this take-along great.

  1. A great snack! I modified the recipe a little by omitting the nuts and adding shreddies instead. I also tossed the mixture with a little dill pickle popcorn seasoning to mimic the 'pickled cowboy' popcorn that you can buy at kernels (a Canadian popcorn store).

“So many recipes, so little time.” I love to cook, especially trying new recipes. I try to prepare at least 3 new recipes a week. I have enjoyed cooking and baking since I was first able to peer over the top of Mom’s kitchen counter. I have been married for over 25 years and have one adult daughter. My hobbies (other than cooking) include gardening, yoga, shopping, reading, and crafts. I also have a commitment to myself to work out for an hour at least 3 times a week Every other weekend, DH and I go to our weekend home at a golf course country club. On Friday afternoons, we usually eat lunch on the road as we try to beat the traffic out of town. I'm always looking for new sandwich ideas for those Friday lunches. Once we get there, I don't want to drive yet again to the supermarket or even out to dinner. (The closest supermarket is 3 miles away.) Through 'zaar, I have found the convenience of "dump" recipes for Friday night dinners. I make them up in advance and freeze, then just put them in the ice chest for the trip. They are ready to grill or bake for dinner. During the week, I stick with quick and easy recipes that can be prepared in 45 minutes or less. On weekends is when I try the more complicated recipes that take a longer time to prepare. I've assembled by main dish cookbooks accordingly. I have nothing against convenience foods (use them all the time!) and I am in no way a food snob. However, I don't cook with cream of xxxx soups, processed cheese food, and others of that ilk. Besides being full of sodium, fat and other bad things, I just don't care for the taste and texture. DH is lactose-intolerant and has high cholesterol, which challenges me to find healthy good-tasting recipes.
