ingredients
- 2 - 2 1⁄2 lbs beef roast, cooked
- 1⁄4 cup celery
- 1⁄8 cup chopped onion
- salt
- 2 hard-boiled eggs
- 1⁄2 cup sweet relish
- 1⁄2 cup beef broth
- 3⁄4 - 1 cup mayonnaise
directions
- Cook meat and cool.
- Grind celery, onion, eggs and then the meat.
- Mix all ingredients together.
- Serve on bread.

I needed little bite-sized sandwiches for an event hosted in the middle of beef country. This filling seemed to fit the bill perfectly. I did omit the eggs, but otherwise followed the recipe. I used sandwich bread with white on one side and wheat on the other and sliced into triangles. The guests were interested to see a familiar farm lunch dressed up for company. It was a hit.
