Roast Fingerling Potatoes

"Last fall I bought some fingerling potatoes at the local Farmers Market. Then I had to find a way to cook them. Searched on the web and blended a few ideas and came up with this. Also works well if you take regular baking potatoes and dice them up into about 1 1/2 in pieces and substitute for the fingerlings."

  • Preheat oven to 425 degrees.
  • Place potatoes in a bowl and drizzle with olive oil. Sprinkle with salt and pepper and rosemary leaves.
  • Toss well to coat.
  • Place on a baking sheet in the oven for 30 minutes.

  3. Used these last night with grilled salmon and turned out beautifully. This is an easy recipe with great results. I used fingerling potatoes but next time might cut down on the rosemary a bit. I used 1 tablespoon but our fresh rosemary seemed very strong, so I might do that, otherwise a perfect side dish.
     
  4. Great recipe!! I used new potatoes diced up and fresh rosemary and a seasoned olive oil. The whole family gobbled them up

I live in Los Angeles County. Married 25 years. 3 kids ages 24, 21 and 12. I'm a math professor and a computer tech. The picture above is me running in the Los Angeles Marathon (the first time I did it) on March 4, 2007. I'm smiling because the picture was taken at mile 3. I wasn't smiling by the end. LOL. I've since done the Long Beach Marathon in Oct. 2007 and I did L.A. again in March 2008. The third time was the trick. I finally had a good race and I qualified to run the Boston Marathon which I did in April 2009. Now I'm into triathlon, since summer 2009.
