  • 1 head garlic
  • 3 medium onions, halved and sliced into thin half-mmons
  • 8 medium new potatoes, unpeeled and cut in half
  • 180 ml stock
  • salt and pepper

  • Preheat oven to 400F/200C/Gas mark 6.
  • Separate the head of garlic into cloves. Hit each clove smartly with a kitchen mallet. Remove and discard the skin. scatter the crushed cloves and the onion slices on the bottom of a baking dish that will hold the halved potatoes in one layer.
  • Place the halved potatoes, cut sides down on the bed of garlic and onions. Pour in stock to come about 1/4 up the sides of the dish. Sprinkle salt and pepper evenly over all.
  • Bake uncovered for 1 hour, until the potatoes are tender, the onions beginning to brown and the liquid about gone. Serve piping hot. Encourage diners to mash the garlic, onion and potatoes together if they wish.
