  1. Measure reserved oil from sun-dried tomatoes to make 1 ½ tablespoons If there’s not enough, top it up with olive oil.
  2. In a saucepan over medium heat, add fragrant oil. When hot, add onions and sauté for 2 ½ minutes. Add sun-dried tomatoes and cook for 2 minutes. Add roasted red peppers and garlic; sauté for 1 minute. Add red pepper flakes, stir well to combined before pouring in heavy cream. Stir, increase heat to medium-high and bring to a simmer.
  3. When simmer, reduce heat to medium-low and cook for 5 minutes, stirring occasionally. Add dried basil and cornstarch mixture; stir for about 60 seconds or until sauce thickens. Add cooked pasta, stir to coat and serve immediately. Makes 4 servings.
  4. Note: Add chicken breast and chopped cooked bacon for a variation.
