- 2 teaspoons vegetable oil
- 4 boneless skinless chicken breast halves
- 1⁄2 cup Russian salad dressing
- 1⁄2 cup apricot jam
- 3 tablespoons dry onion soup mix
directions
- Preheat oven to 350°.
- Heat oil in large skillet over a medium-high heat. Add chicken; cook 4 minutes on each side or until browned. Remove chicken and place in a 3-L baking dish.
- Miz dressing, jam and soup mix in a small bowl. Pour over chicken.
- Bake 45 minutes or until chicken is cooked through.

This was a great chicken recipe, and very easy to prepare. Would highly advise it for a change to otherwise boring chicken recipes. Did not transfer it from skillet to baking dish though. Simply drained my grease from skillet and put topping on and baked in skillet. Big hit and only 2 dishes to wash.

<p>Left to my own devices, I could happily live on appetizers, dim sum, sandwiches and side salads .I gravitate toward a low-fat, clean eating, graze-as-you-go way of life.
