Salmon in Cream

"This is an easy and delicious way to serve salmon. The cream keeps the fish moist and if you choose a dish the steaks fit in snug but not too tight, the amount of cream is not all that bad. You could try this with half cream; I have always used cream because it makes a nice sauce. The lemon quarters are served with the fish if you want to sharpen the sauce a little. This recipe is easily made for 2 or 20 people (the four servings in this recipe are just a guide line) as long as you cover the fish with the cream. Keep an eye on it, if the cream reduces too much you have to add a bit more. Nice served with parsley covered new potatoes."

  • Preheat oven to 375 degrees F.
  • Season the salmon steaks with salt and pepper.
  • Butter the ovenproof dish, put in the steaks and add enough cream to cover them.
  • Add the bay leaf and a grating of nutmeg.
  • Bake for 20 to 25 minutes, or until the salmon is cooked, basting with the cream once or twice.
  • Serve with the lemon quarters and the cream.

  1. This is totally outstanding! This fits in perfectly with the diet I'm on now (Somersizing) and you can hardly believe you are dieting when you have such delicious food on your plate. Okay, this is not an advertisement for my diet. I had a whole fillet of salmon in my freezer (about 2 pounds) which I cut up into serving portions while still slightly frozen. I also zested the lemons and mixed that in with the cream, salt and pepper and the nutmeg. This was truly one of my more enjoyable suppers and I discovered this morning that it heat up beautiful in a microwave, as long as you don't do it on full power. Annelies, thanks so much, I'm going to be forwarding this to all my friends that are on this diet!
     
  2. Besides the lemon zest another nice addition to add the end of the cooking is, chopped herbs to the sauce. These are the ones I like to add: parsley, basil or tarragon.

  5. this was really good. I have a hard time tolerating salmon lately but really want the health benefits. Covering with cream seems to make it more moist and takes away the fishy taste. it is also more filling.

  1. This is a truly wonderful recipe which I wanted to try, however, did not have salmon and used marinated chicken breasts instead. Scraped off the "yummie" into the gravy, and it was out of this world. Guess it can be adapted to meat, salmon, chicken, etc. Easy and so tasty, but don't want to think about the calories considering the cream.

Hello, my name is Bonnie and I am a very beautiful cat as you can see if you look at the picture at the top of this page.... What??.. I am supposed to talk about you??? But it says here: About Me!! Well all right then ...... My mom is Dutch and has moved to England in October 2007, after living 15 years in the Netherlands with my English dad. They don’t have any human children and “created” their own family, which means I have to share them with Hannah, she is a 6 years old tortie cat, Abby the dog, she is a 9 year old Beagle, and a one year old black Miniature Pincher named Poppy, I refuse to tell you my age but I am a georgious lilac British Shorthair cat!! It is obvious she adores pets just by looking at her name she uses on Zaar (many on Zaar call her Pets or Petsie Poo), her name in real life is Annelies and that is a common Dutch name. My mom always liked to cook, but since she joined Zaar it got out of control, and it doesn’t help that she is disorganized. Printed recipes everywhere in the house, the recipe binders have got bigger and just between you and me, her hips too!!! I have lived in Holland all of my life until now, but they lived in several different countries/places:- desert and coastal Oman, up North and West in Holland, Vancouver-Canada, Aberdeen- Scotland and in Norway they lived in Bergen and Oslo. We have all moved together to England, as you can see I’ve already learnt the language! I heard her say to Dad that this is the last time she moved to another country...she's had it with moving from one place to another! ( its her age...she's getting grumpy) Mom is 55 years old but I always hear her say that the date of her birthday does not mean that much to her, the date of her cancer anniversary is more important, because so far she is a survivor. Besides cooking she has other interests too, crafts, gardening and soap making. She likes Zaar and is one of the hosts on the German-Benelux Forum here on RecipeZaar.
