Salsa Topped Chicken Breasts

"This is a very good chicken dish. The salsa for it is very tasty. I haven't tried it with the fish but it sounds like it might be good also. We have to work that fish into our diets somehow"

  • Cover and chill Salsa 2 hours.
  • Sprinkle chili powder, cumin, salt, and pepper over chicken.
  • Melt butter in skillet and cook chicken 5-7 minutes on each side.
  • Stir cilantro into salsa and serve over chicken.

  1. I found this recipe in Southern Living years ago and it is really wonderful. The only variation was red instead of green bell pepper. The salsa is also my favorite recipe to serve with tortilla chips. The balsamic vinegar gives it a wonderful flavor that people go nuts for. I used to make a huge bowl of this whenever my friend and her husband came for dinner. He would call ahead to make sure it was on the menu. I can't believe this recipe has been unreviewed for so long..try it you'll like it! Thanks, Paula, for posting!
