  1. Poach sausage in boiling water for about 15 min.
  2. Set aside to cool.
  3. Heat olive oil in a large skillet.
  4. Saute onion and pepper on low heat; you want to make the onion translucent, but not browned Slice sausage into 1/2" rounds Add sausage to skillet, mix well.
  5. Add can of tomatoes, stir, and cover.
  6. Cook over low heat for 20 minutes.
  7. Add salt and pepper to taste.
  8. Serve over cooked pasta.
