  • Cut off the base of the bok choy stalks; discard. Separate the stalks and leaves. If the stems of the bok choy leaves are large, chop finely. Wash the leaves and stalks; drain in a colander.
  • Heat the oil in a large skillet or saucepan over medium-low heat. Stir in the green onions, mushrooms, garlic, crushed red pepper, salt and black pepper; cook, stirring often, 5 minutes. Stir in the bok choy and coconut milk; cook, stirring until the leaves are tender and stalks are still crunchy, 3-6 minutes.

  2. We made this last night and it immediately became one of our new favorite dishes! Served over thin (Maifun) brown rice noodles, along with some ground chicken meatballs. Made a few adjustments, of course, as one does; less bok choy, more broth. Used tamari instead of salt, added some roasted sesame oil, and also ginger paste. Oh yes, and peas. A keeper for sure.

  3. I usually pair this with a grilled sausage or chicken breast. A dynamite side - there's never any leftover!
     
  4. Yum! I omitted the coconut milk/veg broth because I didn’t have any on hand so instead I squeezed some lemon on top and it was great!
