Sauteed Garlic Broccoli - Spicy

  • Cut broccoli into bite sized pieces.
  • Boil in salted water for about 5 to 7 minutes (broccoli should just start to soften).
  • Rinse under COLD water (to stop the cooking).
  • Dry to remove any excess water.
  • In a large skillet, heat the oil until hot.
  • Add the garlic and pepper flakes.
  • Sauté for 1 minute.
  • Add the broccoli and "some" of the broth. (I say "some" as you don't want it soaking in it, you just want it to help steam and add flavor)
  • Cook for 2 to 4 minutes (depending on the way you like your broccoli, tender or crisp) stirring the entire time. Season lightly with table salt.
  • As everyone has their own tastes, increase or decrease the garlic and or pepper flakes as desired.

  1. Made this for supper tonight with our red snapper, they went well together. It was very good and we will have it again, often. I cut the recipe in half and only used 1/4 tsp red pepper flakes and left the garlic as 4 cloves (we love garlic), very tasty, thanks for sharing a good one!

Yum!!,yum,yum!!I could go on with yhe yums forever.This was absoulutoly delicious!!!Had this Sunday night,it was perfect becauuse we had had a BIG lunch and didnt want something to heavy!!!I served it over steamed rice and soy sauce and I didnt change a thing!!!Will definatly make again,the only thng I will do different is double the recipe cause I could have eaten several more bowls!!!Thank you!!!!
     
  4. I made this recipe last night with Roasted chicken and it was simply wonderful. I especially liked the lightness of the olive oil with the garlic as it gave the brocolli a nice fresh clean taste. Really enjoyed this one and will be fixing again this weekend to impress the hubby. Tweaks

  1. Sorry to say that this just didn't do it for me. I thought I would like it a lot, especially with the red pepper and garlic, but I think a combination of "something being missing" and that I think the chicken broth both overcooked the broccoli when it hit the pan (I did steam it for 5 minutes prior to cooking instead of boiling- but I do not like to boil veggies) and I just didn't care for the dimension of flavor the chicken broth added. If I make this again, I will omit the broth, and let it cook a little over drier heat and probably add a pinch of salt to boot. But thanks for posting- I do enjoy trying your recipes.
     
  2. This is an excellent dish. The only variation I made was to reduce the amount of red pepper to 1/2 tsp, which was just zippy enough for our tastes. Neither my husband or I eat broccoli often because it winds up so bland. Not in this case. It was quite delicious! I might even try substituting some white wine for the broth for another variation. Also--this makes a lot-so when I started the 2nd step I removed half of the broccoli after a couple of minutes and put in frig for another meal. When I reheated it 2 days later it was not mushy as a result. Thansk for a great recipe!
     
  3. This was supper tonight for me and me alone, and I thoroughly enjoyed both the solitude and the meal. I nuked the broccoli in the microwave to soften in, the continued on the stovetop, using vegetable broth instead of chicken, and I added some freshly minced ginger. Thanks Rise, the peace and quiet in my house and this excellent dish made my evening!
