  • In large skillet, saute zucchini and tomatoes in hot oil and butter for 5 minutes.
  • Add parmesan basil, and pepper.
  • Stir to coat well.
  • Serve hot.

  1. Miss Nez...your veggie recipes are A-1! Simple and to the point. If you are going to eat tomatoes and zucchini, you want to taste them. This recipe does just that. Wonderful and easy to do. In your time to cook it said 55 minutes, but it really doesn't take that long. I just did mine for about 15 minutes. The zucchini came out tender but not mushy, and the tomatoes were cooked just right. It is a beautiful dish to serve and we enjoyed it very much. Thanks!

  3. Delicious! I did add some minced garlic and a few tablespoons of chopped onion, but otherwise I made it as directed. I think next time I will add the tomatoes towards the end of cooking the zucchini as they did get a little mushy. Regardless, this dish is really, really great. Thanks for posting this recipe.
     
  4. MizzNezz thanks for posting this super simple and quick recipe. As i am by nature a recipe butcher I added some roughly chopped bacon and onion (also a touch of paprika and a tspoon of red wine and a clove of garlic) Zucchini rated a zero for me but not now. This was just awesome!
     
  5. Really great! I increased the zucchini to 3 and added 5 cloves of garlic and some crushed red pepper. Kids and adults both loved. I severed mine over brown rice without the parmesan. Everyone else ate it straight up with the parmesan. Loved by all.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
