  • On low speed, mix crushed pineapple with juice, bread crumbs, butter, sugar, eggs, and milk.
  • Stir in chunk pineapple.
  • Spoon into casserole dish and cook, uncovered, 1 1/2 hours at 350 deg.
  • or until golden brown.
  • Serve hot or cold as a casserole, or as dessert with ice cream.

  1. THis is REALLY good! My son who won't eat pineapple had SECONDS! I would say its a bread pudding! It tasted exactly like bread pudding!Adding this gem to my cookbook! Always have the ingredients on hand for this!
     
  2. I had this at a potluck and loved it. However, they sprinkled some dried cranberries on top and it added some color and great taste.
     
  3. I used to always make this as a side dish at Thanksgiving . . . skipped a year then lost the recipe . . . I was SO glad to find it here. This is the perfect accompaniment to turkey or ham. Delicious!
     
  4. Wow, I just had this on Christmas night, courtesy of a central Texas-native grandma so it must be a regional thing. I'd never heard of anything like it and was a bit unsure, as were the kids, lol....well, we all tried it together and immediately went back for more! It's so different but really good...almost like a bread pudding, but not exactly...a bit remniscent of scalloped potatoes, but not exactly the same. Sweet but not *too* sweet, great hot with a sprinkle of salt or as cold leftovers with a splash of cream. My children have already asked me to make more for them; I love it when they find new and different things that really catch their attention (and appetite!) Thanks so much for including this unique and tasty recipe here, Miss Annie!
     
  5. This is a yummy cake-like dessert. I halved the recipe and then used just 1/2 cup of sugar and 1/2 cup of milk (I misread the recipe and added too much milk, but it still worked!) Oh and 2 eggs. It's good slightly warm. Enjoy!
