Scalloped Tomatoes

"Nice side dish. I use sliced canned tomatoes and i add some chopped green pepper to the celery and onions."

  • Cook celery and onion in butter till tender; blend in flour.
  • Cut toast into 1/2 inch cubes.
  • in 1 2/2 qt.
  • casserole combine celery-onion mixture with tomatoes and half the toast cubes, sugar and seasonings.
  • Bake in 350 oven for 30 min.
  • Top with remaning toast cubes and bake 15 min.
  • longer.

  3. This was great! I simmered all the vegetables on the stove in olive oil instead of butter. Then added all the seasoning (minus the flour) including 1/2 t red pepper flakes. I poured this over the toast and baked. I added parmasan cheese to the top during the last 10 minutes in the oven. Great side dish!
     
  4. BF doesn't care for tomatoes, but he actually asked for seconds on this one. When the list said "canned tomatoes", I wasn't quite sure what to use. I had some diced tomatoes in the pantry, so I used those. I used half with no added flavoring or salt and half with Italian flavor seasonings. I thought it would be too much liquid using diced tomatoes, so I drained most of it off. I wasn't sure I should have done that, but it worked out well for us. Also, I didn't have onion on hand -- I have a very hard time cutting and chopping onions as they always burn my eyes to the point that they water so badly I can't see, and someone else always has to finish the job for me. I've started using leeks in place of onion. I get the same flavor without the burning eyes. The leeks worked well in this recipe, too. We thought the flavor was 5-star quality, but we both felt it could have used a little less salt. Next time, I will omit the salt entirely and add it afterward, if necessary. It might have helped, too, if the ingredient list had stated whether to use the tomatoes drained or undrained. Overall, I will definitely be making this one again! I grew up on a farm and learned to cook from scratch. By age 9 I could follow a recipe.So I have been cookng for a lot of years now. Besides cooking I enjoy bible study, church, crafts, collecting rings and Christmas ornaments, reading, collecting angels and visiting with friends via E mail. Have been married for over 30years and have four children, two of which are handicapped. The kids are all grown now and I am getting use to cooking smaller portions. Recently found out my husband has non-hodgkins-lymphomia. He will start treatment soon. Learning more about healthy eating and healthy cooking.
