  • Brown scallops in 3 Tbsp of the butter.
  • Cook 2 minutes.
  • Remove.
  • To skillet, add shallots, mushrooms, tomatoes.
  • Cook 2 minutes.
  • Add wine- cook till reduced by 1/2.
  • Add cream and salt and pepper.
  • Cook 3 minutes.
  • Return scallops and add the 1 Tbsp butter.
  • Heat through.

  1. Very nice flavor. I will make this again. Next time I'll skip the cream since the canned tomatoes and wine made a nice broth on their own. I used bay scallops, but will try sea scallops next time. Either would be good. Thanks for a really tasty recipe!
     
  2. The creamy sauce needed more body to it. Next time I will add 2 cloves of garlic when I add the shallots. But over all my family liked it.It was easy to make and a nice change. I do like the tender sea scallops better than the bay scallops.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
