- 2 boneless chicken breasts
- 4 Sandwich wraps or 4 flour tortillas

Tonkatsu Sauce (use 1 cup or make your own sauce)
- 118.29 ml catsup
- 59.14 ml Worcestershire sauce
- 59.14 ml sake
- 14.79 ml ginger
- 14.79 ml garlic
- 29.58 ml sugar
- 29.58 ml mirin

Sandwich Filler
- 236.59 ml shredded romaine lettuce
- 236.59 ml shredded iceberg lettuce
- 0 julienne carrot
- 59.14 ml fresh cilantro
- 59.14 ml toasted almond
- 59.14 ml chopped red pepper

Make Japanese Tonkatsu sauce:
- In small sauce pan combine catsup, Worcestershire sauce, sake, ginger, garlic and sugar.
- Bring to a boil over medium heat for 25-30 minutes, stirring occasionally, skimming off any foam.
- Sauce will keep in the refrigerator for up to 4 weeks.
- Marinate chicken breast in 1/2 cup of Tankatsu sauce.
- Grill chicken and finely chop.

Build Wraps:
- Lay out four sandwich wraps (tortillas).
- Down center divide chicken.
- Add shredded romaine and iceberg lettuce, julienne carrots, fresh cilantro, toasted almonds and sweet chili pepper.
- Top each with 2 tablespoons tonkatsu sauce (recipe above).
- Roll: Bring in sides and roll from bottom to top.

This was very good! I've never had this wrap at Schlotzky's but we enjoyed it at home. I didn't have sake, so substituted white wine. I did use the mirin and the sauce was good, but a little goes a long way as the flavor is quite strong. I made a full recipe and it made 6 reasonably sized wraps. Very healthy and tasty!

I hope it's OK to post a review twice because this deserves 10 stars. I have never visited the chain, so don't know if this is close or not but the flavor is out of this world. I made the sauce, which thickens while it simmers. I cut the recipe in half which filled 3 (6 inch) flour tortillas. The two of us got 1 1/2 wraps. I made no changes in the recipe but do wonder if you really need two different kinds of lettuce. I think only one would work great and cost less. Thanks for posting this is a keeper and is going in my best of 2009 cookbook. :)

This was very yummy. I made sauce up right after buying chicken breasts..so I stuck them in it and in the freezer...was nice to pull it out, unthaw it and grill! Our chain closed awhile back so I can't remeber exactly what this wrap tasted like there..thiw was very good though. I did add mandarine oranges and green onions to ours..loved it !!!
