Shannon's Strawberry Cheesecake Parfait

"I came up with this one as a spinoff to my trifle. It tastes just like cheesecake :) Try it with sugar free cherry or apple pie filling or blueberries!"

  • Mix the skim milk, cream cheese, and lemon zest and juice together until well combined (no lumps!).
  • Add pudding mix and blend well.
  • Add about 1 tbsp.
  • noncalorie sweetener and mix well, set aside.
  • Sweeten strawberries to taste with sweetener.
  • In 3 parfait glasses (Wal-mart sells some cute plastic ones) start with 1 graham cracker, broken in half.
  • Place about 2 tablespoons of strawberries in each.
  • Cover with 5 tablespoons of pudding mixture.
  • Place 2 graham crackers in each glass, and cover with 2 tablespoons of strawberries, then 5 tablespoons of pudding mixture.
  • Continue until all of the ingredients are used up.
  • Serve immediately.
  • If not serving immediately, use reduced fat Nilla wafers or thin slices of sugar free fat free angel food cake.

I am a vegetarian and I love to cook. I have been trying to incorporate whole wheat into my baked goods and have been eating much healthier foods. I really don't have a favorite cookbook, I mainly try different recipes out on the internet.
