  • 12 lb bacon, cut into 1-inch pieces (about 8 thick slices)
  • 10 large eggs
  • 23 cup milk
  • 2 (16 ounce) packages frozen tater tots
  • 8 ounces cheddar cheese, coarsely grated
  • 1 red bell pepper, stemmed, cored, and chopped
  • 1 medium red onion, peeled and chopped
  • 1 (4 ounce) can green chilies, drained
  • 2 scallions, thinly sliced, plus 1 additional, thinly sliced, for serving
  • sour cream, for serving

  • Preheat oven to 425 degrees. Spray a sheet pan with nonstick cooking spray. Line with parchment paper and spray parchment. Set aside.
  • Place bacon in a medium skillet over medium-high heat. Cook, stirring, until bacon is crisp and fat is rendered, about 8 minutes. Remove bacon to a paper towel-lined plate.
  • In a large bowl, whisk to combine eggs and milk. Add tater tots, cheddar, red bell peppers, onion, green chilies, scallions, and reserved bacon. Fold to combine.
  • Transfer to prepared pan and spread into an even layer. Bake until casserole is puffed and golden brown, about 25-28 minutes. Let cool slightly, and then cut into squares. Serve, garnished with sour cream, hot sauce, and remaining scallions.
