- 2 liters chicken stock
- 1 chicken breast fillet
- 250 g shitake mushrooms, sliced
- 2 kaffir lime leaves, lightly torn
- 2 tablespoons fish sauce
- 2 tablespoons soy sauce
- 140 g vermicelli, rehydrated
directions
- Whack everything in a pot and simmer until chicken breast is cooked (approx 15 minutes). Remove chicken breast and shred, return tp the pot with the vermicelli and reheat. You could also use 40g of dehydrated shitake mushrooms.
