Shredded Brussels Sprouts With Bacon and Onions

"I love Brussels sprouts and think they have an undeserved bad reputation with so many because they are often overcooked. (Cooking Brussels sprouts releases sulfur compounds; when overcooked, they develop an unpleasant sulfurous flavor and smell.) In this recipe, adapted from Eating Well (October/November 2006), a small amount of bacon goes a long way to impart its wonderful, smoky flavor to the sprouts."

  • Cook bacon in a large skillet over medium heat until crisp (5 to 7 minutes); drain on paper towels, then crumble.
  • Add onion and salt to the drippings in the pan and cook over medium heat, stirring often, until tender and browned (about 3 minutes).
  • Add water and mustard, scraping up any browned bits, then add Brussels sprouts and cook, stirring often, until tender (4 to 6 minutes).
  • Stir in vinegar and top with the crumbled bacon.

  1. Super tasty side dish for the holidays. I used a bag of fresh Brussels sprouts from Costco that I had picked up, trimmed, and washed last week and froze to use this week for Thanksgiving and as a result needed a bit less water than the recipe called for. I also used turkey bacon so had very little drippings to work with and added a splash of avocado oil to the pan. Worked very well and will keep this dish on our holiday menu.
     
  2. Fabulous. Simple, but tastes sophisticated. Perfect for those who don't like brussel sprouts, because the shredding makes the taste milder. For those that do like brussel sprouts, a great way to prepare them that's not just steamed...I make this at least once a week.
     
  3. This is a wonderful brussel sprout dish! So easy! My kids even liked it. I think the reason is because they are sliced so thin. Way different then when they look like a cabbage! I can't belive everyone in my family enjoyed brussel sprouts! Thanks for a great recipe that I will make over and over again!
     
  4. This is excellent! I used a 10 ounce bag of fresh shredded Brussels sprouts that Trader Joe's carries. I essentially halved the recipe but did use 2 slices of bacon, 2 tsp. dijon mustard, only about 1/4 cup of the water and white balsamic vinegar. I was having lasagna and I recently saw on "The Chew" that balsamic vinegar with a pasta dinner can help lower blood sugar spikes. Quick, easy and very yummy! Thanks for sharing-

Tweaks

  1. Instead of using cider vinegar, I drizzled balsamic vinegar glaze then topped with the chopped bacon. The glaze gave it a nice sweet twist and the bacon stayed crispy - yum!
     
  2. This deserves every one of its five stars. Simple and delicious, Gayla. I used turkey ham instead of bacon but made no other changes. Perfect flavor and very attractive dish.
