Shrimp Braised in Olive Oil

"I found this one in a "Best American Recipes" cookbook...I don't know if it really was one of the best recipes published in 2001, but it's really good! I had to approximate the prep time (I never really paid attention to how long it took), so let me know if I was way off."

  • Combine the oil and garlic in a very large skillet. Turn the heat to medium and cook until the garlic sizzles.
  • Add the cumin and paprika. Stir, raise the heat to medium-high, then add the shrimp. Season with salt and pepper.
  • Cook, stirring occasionally, until the shrimp are just pink (no longer!). Do not evaporate their liquid. Add parsley and serve with some good bread.

  2. WOW! What a fabulous recipe! This is perfect as an appetizer or as a course during a Spanish Tapas meal. Very quick, I would say it took me 10 minutes tops to make this, and that would include peeling the shrimp (e-z peel). I used smoked Spanish paprika and no parsley, we ate it too fast! Make sure you have bread to mop up the smokey garlic oil in the bottom. Thanks Aunt Cookie - this is a KEEPER!

I wandered onto Recipezaar less than a year ago, looking for a lentil soup recipe. I'm pretty sure I haven't left the computer since then...I've been completely sucked in by this site! Of course, I do take the occasional break to actually cook the recipes I find. When I'm not at my computer or in the kitchen, I'm working toward my PhD in clinical psychology from Kent State. I also work as a therapist at the campus clinic, teach a class (Social Psychology this semester), and work as a research assistant. I'm a little bit busy. I do usually find time every day to cook something for myself with the help of this site, and to exercise (to counteract the effects of the great recipes I find here). I don't have much time in my life for hobbies at the moment (sigh), but I seem to recall that I used to like reading, going to see musical performances, and watching movies. I still do my best to travel as much as possible. My sister, Kate, my boyfriend, Jake, and my friend, Kris, are my favorite travel partners. Kate and I go on an "eatacation" every year.
