Shrimp Fettuccine Alfredo

  • In large pot of boiling water, cook fettucini until it's al dente, about 10 minutes.
  • Drain well, and return to pot.
  • Mean while, whisk cornstarch into milk and set aside.
  • On medium heat, heat oil and butter in a large frying pan.
  • Cook garlic for about 5 minutes or until soft but not browned.
  • Mash soft garlic with the back of a fork.
  • Add peeled shrimp and onions.
  • Cook just until shrimp turns pink, about 1 1/2 minutes (shrimp will continue to cook as you add the rest of the ingredients).
  • Briefly stir milk mixture and pour into frying pan.
  • Cook, stirring constantly, until slightly thickened, about 2 minutes.
  • Pour mixture over fettucini.
  • Sprinkle with Parmesan cheese.
  • Add salt and pepper to taste.
  • Stir to combine.

  1. I found this recipe to be too light. If you want fettuccini Alfredo, use whole fat cream and butter. NO cornstarch. It’s a treat so don’t mess with the whole ingredients.
     
  2. This was good and easy to make. I had a pound of shrimp so I used it all. I cut back on the garlic as I thought it would be too much for us. I also didn't have green onions so used onion powder. I also used 2% milk instead of whole milk as that is what I buy. I added the parmesan cheese to the sauce mixture. I doubled the sauce ingredients as I was also making mahi mahi so I topped it with the shrimp alfredo. We all enjoyed this.
     
  3. This was a good dish. However the sauce never thickened so I had to double the amount of cornstarch. I also added a small handful of parmesean cheese to the sauce , a little crushed red pepper , and fresh baby spinach. Came out great. We will make again. Yum
     
  4. I had some leftover gambas al ajillo #127029 and needed to make some quick dinner so I used it in this recipe. I like garlic so I used the recommended amount plus what was still in the sauce from the shrimp! Wow this was really very good. I did double the cornstarch as some reviewers had suggested and it was perfect. Thank you for posting Mmers.

  1. Finally an Alfredo that is so easy I couldn't mess it up! Simple and really tasty. I doubled the recipe and added mushrooms. Also my teaspoons of cornstarch were heaping. It got thick but not very thick so I added the cooked pasta to the sauce and it thickened up quite nicely. Oh and I used minced onions instead of scallions since the hubby hates scallions. Thank you!

  4. Very easy and very good! I only had heavy cream so I subbed it for the milk with cornstarch. Very tasty. i liked the green onions!
     
  5. For all my doubts before adding the sauce to the noodles, this recipe turned out great! I had to substitute the milk for a water/heavy whipping cream combo, and the cornstarch for a few tablespoons of flour, but in the end my roommate and I loved it. If you like garlic like I do, I would add at least 4 more cloves because I could hardly taste it through the parmesan.

They depend on you! ('Nuff said!). <br> <br>June 2003 Update: I now work part-time as a vet tech and part-time as an ER ward clerk at a local hospital. After being a technician for 20 years, the emotional stress was getting too hard to handle. Putting an older pet to sleep after I'd watched them grow up over the years was something I could no longer do. I decided to look for a new job while I was still 40-something rather than wait 4 years when I was 50-something! Working with animals is in my blood however, so I could not give it up entirely.
