  • 1 lb raw unpeeled medium shrimp
  • 1 teaspoon creole seasoning
  • 13 cup ketchup
  • 1 tablespoon bottled prepared horseradish
  • 1 tablespoon lemon juice
  • 1 chipotle chile pepper in adobo sauce, chopped and mashed with a fork
  • 1 medium lemon, quartered

  • Peel and wash shrimp.
  • Place a 12-inch nonstick skillet over medium heat until hot. Coat skillet with cooking spray, add shrimp and Creole seasoning, and cook 4 minutes or until opaque in center. Remove from heat, drain, and cool completely. To cool quickly, place shrimp on a baking sheet in a single layer and let stand 5-10 minutes.
  • Meanwhile, in a small mixing bowl, combine remaining ingredients.
  • To serve, place equal amount of shrimp on 4 dinner plates. Serve with 2 tablespoons ketchup mixture and lemon wedges.
