“I was always looking for a simple breakfast casserole to make, but could never find any. I decided I would just throw a few things together in the oven and see how it turned out and my husband, my mother, and my son all LOVED it. Great for making when you have company and holiday mornings. You can prepare it the night before and bake it in the morning.”

  1. Preheat oven to 350 degrees.
  2. Grease casserole dish (big enough to hold all ingredients mixed, casserole will rise).
  3. Pan fry diced potatoes in skillet with extra virgin olive oil.
  4. If using sausage brown in skillet.
  5. Mix cooked potatoes, sausage, and eggs in bowl.
  6. Mix in half the shredded cheese.
  7. Add salt if you would like (I always use salt).
  8. Pour mixture into greased casserole dish.
  9. Sprinkle remaining cheese on top.
  10. Bake in oven for 35 minutes. (for half the recipe cut all ingredients in half and bake at 350 for 25 minutes).
  11. You will know casserole in done when you stick a knife through the middle and it comes out clean.
