Simple & Creamy Tortellini Alfredo

"A great recipe from Kraft Food & Family, Winter 2008 edition (I just love that magazine!). I substituted sauteed green pepper and onion instead of the peas, as a personal preference, and it was great."

  • Combine broth and water in saucepan.
  • Bring to a boil over medium-high heat and add tortellini.
  • Reduce heat to medium low and simmer 8-9 minutes, covered.
  • Add cream cheese and veggies and heat until cream cheese is completely incorporated.
  • Add shredded cheese and meat and stir well.

  1. Definite five-stars from my six and three-year-old girls! They devoured this. It was crazy easy and fast which is what we are looking for on gymnastics night. I did make a bunch of substitutions with what I had on hand. I used canned peas (and only put them in the girls' bowls as I can't stand peas). Added a touch of garlic salt and some pepper. Didn't have mozzarella so I used "farmers cheese" from Sam's club along with Sam's cheese tortellini. Also, I didn't have bacon so I cut up some turkey sausage (yep, also from Sam's)and threw it in there. Used Neufchatel (low-fat cream cheese). Yum! Thanks so much for a great recipe.
     
  2. Good mid week quick meal. I used a veal tortellini 625 gram (22.5 ounce) packet and upped all to a 7.5 serve but still had to aad an extra cup of liquid, I did use a mix of peas and corn and juliened a carrot, all to give colour and make it more a one pot meal. For the cheese I used a vintage cheddar as that was what I had on hand and some family members sprinkled more on theirs. I also transferred it to a casserole dish and put in a 150C fan forced oven for 15 minutes to cook the peas and corn and the carrot as once the cheese was melted and even after adding the shredded cheese and bacon the peas, corn and carrot were still not cooked.
     
  3. Made for the *Best of 2008* cookbook game as a prize, I esp like recipes that combine veggies w/a starch as a side-dish or can be expanded to be a 1-dish main meal. This 1 is an esp rich tasting & ingredient-friendly easy-fix. Since your intro allowed for pers pref chgs, I subbed sml broccoli florets & cut stem pieces for the peas, added a generous amt of pepper & tossed in about 1/2 cup baby shrimp to satisfy my mostly meat & potato DH. Thx for sharing this yummy recipe w/us. :-)
     
  4. This is a yummy and easy soup to make. I think it has great flavor. I think next time I would use all chicken broth in place of the water. Thanks for sharing!
     
  5. Needed something for a quick and tasty lunch and came across tortellini in the freezer. Found this recipe and had all of the ingredients on hand. YUM!! I halved the recipe for a 9 oz package of pasta, poured out about half of the cooking liquid once the tortellini was done based on other reviews, and added some garlic and freshly ground pepper. Perfect lunch!! Thanks so much for sharing.
