  • Melt butter in non-stick skillet on med-hi heat.
  • Add shrimp; saute 1 minute.
  • Add zucchini, saute 2 minutes.
  • Add tomato, seasoning, salt and red pepper; cook and stir for 3 minutes.
  • Transfer to plate; sprinkle with parmesan.

  2. This was even better than I thought it would be. I used two pounds of shrimp, 3 good-sized zucchini, and 6 roma tomatoes - and upped the spices by about another half. Served it over quinoa. And forgot the parmesan, but we didn't even miss it. I agree with the other reviewers - easy last-minute meal.
     
  3. I decided to use orzo pasta tossed with olive oil and s&p and then thew the saute on top. Really good last minute meal with frozen precooked shrimp. Thanks for the idea!
     
  4. This recipe is great for when you have frozen shrimp and a zucchini and no idea what to do with either of them. I used grape tomatoes, and a combo of butter and olive oil. This tasted great and was dead easy. It rocked our entire house. thanks.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
