Ingredients Nutrition

  • 2 cups Simply Potatoes Diced Potatoes with Onion
  • 1 (12 ounce) packagediced ham or 1 (12 ounce) packagecooked & crumbled bacon
  • 3 cups shredded cheddar cheese
  • 9 eggs
  • 1 12 cups sour cream


  1. Preheat the oven to 375 degrees. Grease a 9 x 13 casserole.
  2. Pour in the Simply Potatoes for the 1st layer, then top with bacon or ham, then sprinkle on all the cheese.
  3. Whisk 9 eggs together in a large bowl, then whisk in the sour cream.
  4. Pour the egg mixture over the cheese.
  5. Bake for about 35 minutes. or until light brown on top.
  6. Let rest 5 minute before cutting into squares.
  7. My favorite condiment is salsa to serve with it!
