Skinnygirl Sour Cream - Bethenny Frankel

"This is an awesome recipe for faux sour cream using greek yogurt and lemon juice. It tastes exactly like sour cream with a fraction of the fat and calories. It's from Bethenny Frankel - celebrity natural foods chef, author, and star of Bethenny Getting Married and The Real Housewives of New York City. I read about this recipe in her book, Skinnygirl Dish. I've put this on top of huevos rancheros, fajitas, tacos, baked potatoes, and chili. Try it, you will not be disappointed."

  • 1 tablespoon fresh squeezed lemon juice (juice of about two wedges)

  1. Just made this to top my taco stuffed peppers. It’s great because I always have Greek yogurt and lemon. Would anyone know how long it lasts in the fridge though?
     
  2. Made this last night with fajitas.It was so delicious! I did add a pinch of salt and let it sit for about an hour. I will not buy sour cream ever again!
     
  3. I just made this and will be back to grant stars when I use it for lunch and dinner today. I used Greek non-fat yogurt and actually doubled the lemon juice because it tasted just like yogurt when prepared as the recipe is written. I am not sure if it gets better the longer it sits or if I should have used a thinner yogurt such as Dannon. I just used this in a creamy apple salad and that was a perfect use for it. Thank you!

I live in northern Minnesota with my husband. We have a dog, Buddy, who is a shepherd-collie mix. We also have a cat, Tigger, who is a brown Tabby. We both like to cook, but I'm the one that gets our meals on the table on a daily basis. My husband enjoys his role as reviewer/critic. I know a recipe is worthy of a 5-star review when my husband gives me a "top shelf, baby" after finishing his meal. If I don't hear that phrase, it just isn't a 5-star recipe. So far, I've always agreed with his reviews. If I ever think he's wrong, I'll have to rethink our system! I've never been a really good cook, but I've always been great at following directions. Thanks to recipezaar, I just have to find the great recipes and they make me look good! It really doesn't get any better than that!
