ingredients

  • 1 12 lbs sole, orange roughy or 1 1/2 lbs other delicate fish fillets, about 3/4 ",thick
  • 12 cup sliced almonds
  • 14 cup butter, softened
  • 2 tablespoons grated lemons, rind of
  • salt
  • 12 teaspoon paprika
  • 2 tablespoons lemon juice

directions

  • Heat oven to 375.
  • Spray baking dish with cooking oil.
  • Cut fish into 6 serving pieces and place in dish.
  • Mix almonds, butter, lemon peel, salt and paprika, and spoon over fish.
  • Sprinkle with lemon juice.
  • Bake uncovered 15 or 20 minutes or until fish flakes easily with fork.

  4. Outstanding recipe Bert! An easy and quick recipe that could be served to company. I had something else in the oven that needed to be cooked at 350*F, so I just extended the cooking time to 25 minutes. The result was a lovely dish that had the right balance of butter and lemon. Thank you so much for posting.
     
  5. So delicious and easy. I made this with 12 pieces of sole, thinking I would have leftovers, but the kids devoured it. I can't wait to serve it to company.

Tweaks

  1. I substituted less than a 1/4 cup of olive oil for the butter and forgot the paprika. It was very tasty and I will make it again!
     
  2. Quick and easy, nice presentation and tastes great. We really enjoyed this, bert. I used fresh haddock instead of sole and about half the amount of butter since I wanted to reduce the amount of fat.

I love to cook and so I am thrilled that I found recipezaar. I work as an educational assistant in a food school so I am around food all day long. I have four children, three of which have already flown the coop so to speak but I still have my 'baby' at home. (He's 21).
