Southern Barbecued Bean Casserole

- 1 lb lean hamburger
- 1⁄2 - 3⁄4 cup chopped onion
- 1⁄2 - 3⁄4 cup chopped celery
- 1⁄2 - 3⁄4 cup chopped green pepper
- 1 can baked beans (I use Bush beans with pork and molassas)
- 1 teaspoon dry mustard (Colemans or Keenes)
- 1⁄2 teaspoon dried thyme
- 1 bay leaf
- 3 cloves garlic, minced
- salt and pepper
- 1⁄2 cup water
- 1⁄2 cup brown sugar, packed
- 1⁄2 cup ketchup
- 1 -2 teaspoon Worcestershire sauce
directions
- Brown the first 4 ingredients-drain.
- Mix in remaining ingredients, bring to a low boil and reduce heat to simmer and cook on top of the stove for 5 min-stirring often.
- Transfer to a casserole dish and bake at 325 degrees for 2 hours stirring every 30 min.
- Add a bit of water if this starts to dry out.

This was a very good casserole, made it for our pulled pork weekend. Just as I was about to put it in the oven , i got a phone call, asking if they could bring two more with them, of course i said yes, and added a can of rinsed red kidney beans and a can of Primo spicy red pepper tomatoes. It turned out a little hotter than expected but was enjoyed by all, not a drop left!!I also cut the sugar in half, we loved the combination of flavours and it certainly was a great complementary dish with the pulled pork!! Thanks for sharing Di, have no doubt, we will enjoy these again! I made them the night before and reheated them in the microwave, which worked great.
