Southern Green Beans, Ham & Potatoes

"I love homemade ham & green beans with potatoes, served with a skillet of cornbread and sweet tea! For this recipe, I took two "soul-food" recipes I had and combined them to come up with this one. It's just the way I like it. You can adjust the amounts of ingredients to your own taste. If I use ham hocks, I usually only add one or two slices of bacon for added flavor, just because I like bacon flavor. But if I don't have ham hocks, I use 4- 6 slices of bacon."

  • Place ham hock and bacon in large Dutch oven pot or soup pot; cover with water.
  • Bring to a rapid boil.
  • Turn burner to medium to medium-high and let it come to a medium boil.
  • Add the sliced onion.
  • Let this cook while you wash and snap your beans (about an hour or more).
  • Wash beans, cut off ends and break in half.
  • Add beans, salt, sugar, garlic, pepper and parsley to the ham hocks.
  • Let it come to a boil, then turn burner to medium, to medium-low.
  • Let it slow boil for about an hour or more or less, depending on how well you like your beans cooked.
  • About 15-20 minutes before done, add your potatoes.
  • Boil until tender.

  1. My favorite summer recipe! I don't add the onion or parsley. I use a little less garlic and a pinch more cayenne for extra kick. I use fresh veggies from a local farm. This with fried cornbread is a family favorite!
     
  2. This was delicious - the best recipe for this combo that I've ever had. Because I cooked it in on the stove in a Dutch oven, I did few things differently: I browned the bacon, adding the onions to the bacon toward the end. I stained the bacon fat, then added a large-diced 1-pound ham steak instead of the hocks, and used a quart of homemade chicken stock for the liquid, adding a little more when I added the potatoes. Because of these changes, the 2 teaspoons of salt made it too salty. Next time I will hold off on the salt till it's done cooking and add it to taste, if needed. I also added the lesser amount of cayenne
     
  3. Very good recipe.I used chicken broth instead of water and small amt. of red peper flakes instead of cayenne pepper. My son's loved it.
     
  4. It was simple to make and my whole family loved it (including 2 toddlers)

I love to cook, but don't have a lot of time to do it, since I work full time. I like to try a new recipe every Saturday, if time allows. <br> <br>I have one grown son and three grandaughters ages 16,10 and 3. The ten year old has won many medals in gymnastics meets over the past few years.
