Southern mashed potatoes

"Everyone always tells me that they have never heard of Miracle Whip in mashed potatoes but I grew up on this recipe in South Georgia. Maybe it's a local thing; maybe it's just a family thing but everyone who tries them likes them. I have never measured the ingredients for these so you might want to start off with a little and adjust to your taste. And let me know what you think! P.S. These go great with my Cheesy Meatloaf also on this site."

  • Peel and chop potatoes.
  • Boil in 4 quarts of water in till soft (about 15 minutes).
  • Drain and put in large mixer on low.
  • Add Miracle Whip, maargarine, and milk.
  • Mix until smooth.

  2. I've used this recipe for years...but with regular mayo and no butter. I also hand mash instead of whip - I like it slightly chunkier. I originally tried this because I ran out of butter one time and needed a creamy consistency. It's been a family favorite since. I think the vinegar in the mayo gives it a bit of a punch although it's not noticeable. Thanks for sharing your version!
     
  3. I use to date a guy from Puerto Rico, who always made his like this. I really liked the taste for something different. It's got the taste of potato salad.
     
  4. WOW! I have never calculated the calorie and fat grams for this recipe. It's quite high, but you can substitute with reduced-fat or fat-free Miracle Whip, reduced-calorie margarine and skim milk and it will still taste good.
