Southwest Potato Salad

"I was craving potato salad and came up with this recipe. I guestimated the amounts as I was making it as I went along. I think this should be pretty close to the original."

  • Cook and cube potatoes. Place in large bowl with peppers, green onions and cilantro.
  • In seperate bowl mix together all ingredients for the dressing. Toss gently with warm potatoes and place in refrigerator to cool, about 1 hour.

  1. I did take several liberties with some of the ingredient amounts, but nothing major, I thought, & the resulting salad was great! I used just half the amount of both the chili powder & the cumin, & then doubled the amount of green onions since we like them so much! Definitely a new take for us on potato salad, but we did enjoy it! Thanks for sharing the recipe! [Made & reviewed for one of my adopted chefs in this Spring's Pick A Chef event]
