  • Saute rice in bacon drippings until rice is browned.
  • Add onion, tomato, garlic, green chiles, and water.
  • Simmer covered until water is absorbed.
  • Fresh chopped cilantro may be added just before serving.

  1. Very nice and really simple! I went a little easy on the green chillies, and upped the pepper a bit. Next time I'll add some chopped green bell peppers as well. This one's a definite keeper!

  3. Very good and so simple. I left out the chilis completly (have small kids) and added 1/2 tsp cumin. I also started out with a bit of olive oil insead of the bacon drippings because I did not have any on hand.
     
  4. We love, love, LOVED this rice! I doubled the recipe and used a bit more bacon grease. I used one can of mild green chilies, and two fresh hot chilies, chopped fine. I also sauteed the vegetables before adding the water - and I used half water and half broth that I had on hand. It was excellent, and everyone at dinner wanted a copy of the recipe. I will direct them to Zaar!
     
  5. Very good recipe! We misssed the tomato flavor, so we added 1/2 cup MILD salsa, and it really added the finishing touch! I will be serving this at our Mexican Christmas Party on Dec 5. Thanks a million!

  1. Wonderful recipe. Made this and got five stars from my wife and she is very picky about her Spanish rice. The only thing I done different was I used salsa fresca in the place of a tomato, and used chicken broth instead of water. Also added some chili powder, and a little cumin. Just a great recipe, Thanks.
     
  2. Really easy to make and it tastes great. I left out the chilies. I also used chicken broth instead of water and olive oil for the browning. I didn't have any fresh tomatoes on hand, so I strained a can of chopped tomatoes and put those in. Worked great.
