ingredients
- 1 cup granulated sugar (read *NOTE)
- 1 cup water
- 1 cup fresh lime juice (about 8 limes total)
- ice cube
- 1 quart seltzer water (or club soda)
- lime slice, for garnish
directions
- *NOTE: Whirl the sugar in a mini-chopper or blender until finely ground. Basically, you've just prepared "superfine" sugar at a fraction of the cost.
- In a small saucepan over medium heat combine the sugar and water. Cook, stirring until sugar is dissolved and liquid is clear. This should take only 2-3 minutes.
- Transfer liquid to a pitcher and allow to cool.
- Once cooled, stir in lime juice. Stir well.
- Fill a large pitcher with ice cubes, pour in the simple syrup and the seltzer water.
- Stir well and serve!

YUM! I didn't mix the whole batch but am combining as I go. It's just me & I don't want it getting watered down & flat. This is tremendously refreshing! I think I'll keep some lime syrup in the fridge for the rest of the summer....made for the Cruisin' Culinary Queens of the Culinary Quest 2014. xo Bethie
